Paleo Banana Bread Recipe
Yields 1 loaf (12 servings)
Ingredients
- 1/2 cup coconut flour
- 1/2 cup almond flour
- 3 bananas
- 1/2 cup butter, melted (can substitute coconut oil)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup honey
- 4 eggs
- 1 teaspoon vanilla extract
For the crumb topping:
- 4 tablespoons almond flour
- 1 teaspoon ground cinnamon
- 2 tablespoons butter
Directions
- Preheat oven to 350F and line a standard loaf pan with parchment paper.
- Use a fork to combine the almond flour, cinnamon, and butter for the crumb topping. Set aside.
- In a medium bowl, stir together the flours, baking soda, and salt. Use a whisk or a fork to ensure the flours do not clump and everything is mixed evenly. Set aside.
- In a separate bowl, combine the eggs, vanilla, honey, butter, and mashed banana. Add the dry ingredients and mix until well combined.
- Pour the batter into the prepared pan and sprinkle with the crumb topping. Bake for 40-45 minutes, until golden brown and a toothpick inserted in the middle comes out clean.
