Paleo Chocolate Cupcakes
Yields 12 cupcakes
Ingredients
- 2 cups almond flour
- 1/3 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 3/4 cup honey (can substitute maple syrup)
- 2 eggs
- 1 tablespoon vanilla extract
Directions
- Preheat oven to 350F, and line a standard cupcake tin with cupcake papers.
- In a medium bowl, combine the almond flour, cocoa, salt, and baking soda. In a large bowl, whisk together the honey, eggs, and vanilla. Combine with the flour mixture and stir until no clumps remain.
- Scoop the batter into the lined cupcake pan, filling each cup 2/3 full. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack before frosting and serving.
